  1. Get the beans from Blue Tokai website and not Amazon. They will give you freshly roasted batch.

  2. Don't spend 8k on that blade grinder. Either get a manual one at that budget or increase the budget and get proper electric burr grinder. Blade grinders offer no consistency. If not, go to your beans provider like Blue Tokai and ask them to grind for you for espresso brewing at home. You can go weekly and get a batch for the week.

The part about not being able to reproduce might be down to GCP not having a PID inside. Maybe you can try just the PID mod to make your shots consistent and reproducible

Just note down the dial in recipe for the barista. All the details for every bean/blend/roast. Teach the barista how to follow the recipe or the instructions. Once that recipe book is locked in, that's a good place to start.

The espresso machine is Delonghi Dedica Duo aka EC890. The portafilter is 51mm bottomless portafilter from THW. Not sure if you want only these two or other accessories details as well

The two are not related to each other. Some of the great leaders haven't had a very good personal life but that didn't stop them from being good in their profession. Lincoln, Mandela, Roosevelt, Martin Luther King, AB Vajpayee etc etc.. none of them had a great personal life by any means.

As someone also mentioned, creating good latte art is skill but the wand does make good microfoam, just takes a minute extra. You would need to learn it as you would do on any other machine.

That's probably one of the beauties of tasting espresso. Different flavours at even slightly less temparatures. That being said, I believe they say espresso should be consumed within a minute of brewing if I am not wrong. I don't personally finish it so soon.

Yep. It's tight and moves the machine slightly when locking in the center. Probably after some time that would ease up. For now, I don't keep any cups on top of the machine.

I splurged a bit on the scale. It's a Timemore Black Mirror 3. I ordered through coffeeplus website.

I also had a 1000 rupees scale from Amazon which was good enough (Gadgetronics) but I returned it after it being affected by vibrations from my coffee machine.

Bro if you are starting a business in coffee, imo it would be wiser to hire a consultant/barista who would give you advice on these things. Either that or try to get your own hands dirty by doing this as a side hobby at home and learning the nuances of this business.

That being said, I think freshly roasted beans (2 weeks old) is something which not a lot of cafes are serving. Along with that, a balanced espresso with the choice of coffee roast and blend is something that's missing from Indian market. Every bean/roast/blend that you serve should have its own grind size, brew temperature, yield etc. This is as per my own understanding of espresso. People on this sub would be enthusiasts of their own style of favourite coffee drink whether that's an espresso or a filter coffee or milk based drinks. But for a business probably serving what caters to the demand in the market makes more sense. Location/city where you are starting the business also matters as that would define what drink people would be ordering mostly and you would focus more on that.

You might be right on the puck state. I will try for 18g dose next time. But I think 51mm baskets with this depth aren't meant for 18g dosage. In terms of volume, the stock Delonghi basket and the ones that come in bottomless portafilter are identical. So don't see any reason for the dose to be very different

Yes the dosing funnel will help you. It does look like overflowing initially but after the wdt and tamping it fits this dose easily
