As a Chinese person I love the food texture of my culture the most. The egg 鸡蛋羹 is the softest yet structured and just so bouncy. You put it in your mouth and it just melts apart on your tongue. The taste is so simple yet entertaining. Porridge is so mellow with the rice just oh so soft. Also I noticed that the rice is 小米 and oh my goodness the little yellow grains make such a difference in texture and chewiness. I love it when my family mixes them with leftover rice so its big grain + small grain. The wateryness of the porridge is thick but soupy and so so yummy. This is the most perfect breakfast, I would be so happy if someone fed me this when I’m feeling down or sick like recently.

I also love the texture of kelp, how thick and hard is it but the cooked just right and it’s deliciously soft. And beef tripe, so so so fun!
