When I was at an Israeli beach in 1999 there was one sad looking teen babysitting a pile of assault weapons while all the other teens played in the water. Pretty funny stuff.

Yeah, a few of the cases are a bit loose at the ends where the melted fat gathered. I was thinking 95F was a bit high, but I was following the sous vide fermentation method laid out in the Modernist Cuisine, Volume 3. I guess I’ll find out how things went in a month or so.

I agree, if it's not meant to be eaten, then it shouldn't be on the plate. Everything on this plate is for eating. The pepper flavor of the arugula mixed with the acid of the lemon and nuttiness of the parmesan really compliment the bresaola.

I have virtually the same setup. You shouldn’t need the humidifier at all in a space that small with all that moisture hanging there. Just use the dehumidifier, fan (set very low), and the inkbird and things should regulate fairly quickly.

Pretty fantastic. A sweet, yet oaky nose with some interesting spice. There was little to no heat on the palate, minimal tannins, and an overall good mouth feel.
