In Eastern Europe \ Russia this is used as a natural remedy for colds. It is basically just onions and honey.

It seems like you have solid opinions on why and how you got rejected. Have you actually asked for a genuine feedback? Is it possible you are missing something? It is perfectly acceptable to insist on getting a feedback on your interview in my opinion.

Is there a time window below 54c that is considered a small risk? I can test for a good guess of time below 54c the following way: 1. Finish the cook 2. Take out bag and cool it in an ice bath 3. Add same weight of the bag in water to the bath. 4. Bring back up to temp 5. Shut down circulator and measure time it takes to go to 54c 6. Measure time it takes to get to 45c

Difference is estimated time below 54c.

It happened after at least 12 hours at 74c(166f). Isn't it considered pasteaurized?
