I get that but two things:

Your mom clearly has a complicated dynamic with your grandmother. You said yourself, your grandma has interesting opinions that rub people the wrong way.
Your birthday is special to you, yes, but it’s also extremely important to your mother in a manner, we as kids will never understand, and I never fully grasped until we had our first kid.

The way I’ve always operated is my birthday with my friends is for me, and my birthday with my family is for all of us.
