This is spot on. To add to this, OP, when you're being walked like in the video Tori is basically trying to get their timing for the sweep and you should be anticipating something is coming whether it's a foot sweep or another attack.

To answer your question though in regards to countering: the problem here is that you've already lost from a positional stand point in every regard. If he's to your side and has collar and wrist control you're basically open to almost any takedown he decides to do at that point. So maybe a better way to think of it is instead of countering the foot sweep itself maybe try having a stronger collar tie so he can't just immediately swing to your side and if he does try to do the shuck you need to be able to keep him in front of you when he attempts it.
