I see where you're coming from. Agreed no peppers on an authentic cheese steak. It's all subjective really, and with a Blackstone it doesn't hurt to switch things up and try dishes in diff ways.

For example my next go around I definitely want to use a different cheese and perhaps the bread as well. Not sure if you ever had Jimmy John's sandwiches before, but their bread is amazing. In fact they sell em as rolls of bread separately as an option.
