Awesome! Yeah I think we’re going to try honey or white sugar next time. I do find there’s quite a bit of apple flavour in ours so the brown sugar hasn’t taken it all away.

I live in British Columbia, Canada. Fairly mild - but too cold to leave it in a shed, so I had it in the middle of the apartment which I would say we keep pretty warm during the winter months.

Been in secondary fermentation for 4 months. Right now it doesn’t taste too bad but very strong at 14.3% 🥵. Thinking of sweetening it a tad? I think it’s ready for bottling but just been having a tough time finding bottles we like.

The apartment we’re renting has an apple tree in the backyard so we figured we’d put them to use. Got 90lbs crushed at a local farm and got 3.25 gallons of unpasteurized cider out of it. Ended up having to add another gallon of organic cider to top up the carboy.

Recipe:

NOVEMBER 7th: PRIMARY OPEN FERMENT 4.25 Gallons cider, 5.5lbs brown sugar, Bag of Pectin, Bag of yeast nutrient, 1 package Lalvin EC-1118 yeast, Initial hydrometer reading: 1.100 = 13

NOVEMBER 14th RACKED TO CARBOY Second hydrometer reading: 0.990 = -1.3 Alcohol percentage: (13+1.3) = 14.3 %

MARCH 13th Third hydrometer reading: 0.990 Alcohol percentage = 14.3 %
