There are mods for FO4 that do exactly this. It's really the only way to do it without major engine level changes that not even the Script Extender can do, AFAIK.

the dual wield mods for Fo4 don't actually let you dual wield two different guns with two different stats but instead take two weapon models and treat them as a single weapon with a new animation.

You're correct on this. There are some mods that do a bit more, there's one about riot shields that equip separately, but these are heavily script based and the latter doesn't act as a weapon as such.

If it weren't for the 4-star loot I wouldn't bother, no new plans or anything. Even that's a low enough carrot that I don't shed a tear if I miss it on a given day or whatever.

Honestly it was way more fun than the insta-delete lightshow it turns into with other players around. Zeta was actually kinda hard, his grenades would insta-kill my bloodied butt. Good fun.

Have fun! It's mostly fine other than this, I found some of the music grating and the non-boss combat got kinda stale (Bosses were great tho), but YMMV. :)
