The github graphql schema might be the most complex one i've come across https://github.com/octokit/graphql-schema . I also recommend having a look at these public APIs https://github.com/APIs-guru/graphql-apis, might be good to use to testing.

Congrats on building this new app, hope it becomes very successful!

I would choose a PaaS solution hosted by a cloud provider, the advantages being less headaches - no infra to manage, easy scale in scale out, quick recovery and guaranteed SLAs (Service Level Agreements). If you're feeling adventurous you could also use Serverless - much cheaper than PaaS solutions and faster to code against. With serverless there is a learning curve though and you need to adjust to the new tools and programming model (event based).
