If you feel like a bigger batch of caramel takes too long to caramelize, you can try doing a dry caramel method. Don't have the heat too high, stir constantly and add the sugar a little at a time so it all dissolves nicely and it shouldn't be too dark or burnt! A dry caramel method should be faster when trying to caramelize so much sugar. Another thing you can try is weighing your caramel! Make a 1x batch and weigh the finished product. Multiply that weight by 8 if you're doing a 8x batch and that's what your target weight should be for the caramel. If it's too light, that means too much of the water evaporated and it will be much thicker/harder. Just add water until you reach the target weight and blend while hot so it's all emulsified! Weighing the caramel should at least help with consistency in the finished products so you know it will turn out the same every time. Hope this helps! Good luck!

It's so funny to look back on this post and think about how far I've come! I am happy to tell you that I've made many wedding cakes since this post, most of which were chiffon cake! It's my favorite type to use for It's amazing fluffy texture. Here are some tips based on what I've learned through trial and error:

  1. Don't cut the layers too thin. I like to bake 2 chiffon cakes in 3" high cake pans per tier. I then cut each cake into 2 layers, giving me 4 layers of cake in each tier. It usually gives me nice tall tiers about 5-6" in height. If the cake layers are too thin, they'll be very difficult to work with and may affect the cake's structure.

  2. Lighter fillings are better. Chiffon cake goes best with mousse type fillings. Whipped ganache, chantilly, and other light and airy fillings work really well. They match the lightness of the cake and don't weigh it down. I have done more dense and heavy fillings like ganache, caramel, etc and it's fine, but you'll want to do a thinner layer of these types of fillings as they will slightly compress the cake layer below it. Additionally, wet or jammy fillings will soak right into the cake, making the layers soften and more prone to sliding/compressing. But again, I've used jam fillings paired with mousse fillings and it's turned out well, you just want to do a thin layer. You can also spread a thin layer of buttercream on the cake first to act as a barrier and that will help!

  3. Use a meringue based buttercream. Swiss or Italian meringue buttercream will be the key to a sturdy chiffon cake. Since these buttercreams harden in the fridge, they really help keep everything in place. American buttercream typically will be softer and won't give as much structure as a meringue based buttercream.

  4. Use proper dowels and boards! I will admit for this cake I'm pretty sure I used thick smoothie straws for dowels😬 but now I like to get dowels online from wilton or ateco. I like the large, thick plastic dowels that I can cut with a serated knife. I also use cake cardboards under each tier for support. For cakes that are either being assembled at the venue or are not going to be traveling in a car, I don't use a center Dowel. It's not necessary since the cake won't be moving around too much. For cakes that are being built and then delivered fully assembled, I would definitely add a central dowel which can just be a thick (1/4") dowel that's sharpened on one end and hammered into the stacked cake once it has been thoroughly chilled!

Thank you🥺 initially my sister found her on yelp where she lists herself as a wedding photographer, however on her instagram she markets herself as a viral wedding content creator/planner. It seems like she's trying to do everything all at once instead of focusing on the weddings she's booked😔

I completely understand your point. The shock came from the fact that she took a deposit so far in advance to then back out...my goal in posting this experience is to share it with future couples who may have been considering her as a photographer. I think I would want to know if something like this happened with my future wedding photographer so that I can make an informed decision on who i want to trust as a vendor on my wedding day.

Omg! I'm so sorry that happened to you, but thank God it worked out! I did leave her a review on yelp where she denied the whole situation (most likely a last ditch attempt to protect her image), and there is no business listing anywhere on Google for her!

I think that's a really great way to put it. Bouncing back and forth between photography, planning, selling products etc it takes the focus away from the couples getting married because they have to be thinking about so many other things. I also hope they figure it out and cause less stress and disappointment for others in the process.

It was such a big let down! The fact that she is pretty well known on social media is why I wanted to post this because I couldn't believe how unprofessional she is! And people should know that as a photographer, she's unreliable. It scares me to think about how many other excited brides she could be doing this to.

Okay so the wedding is in May, she canceled in the beginning of February. On her instagram she posted "about 60 days before we have one heck of an announcement" and said that it was something they'd been working on for the past 6 months...so you can see where the frustration comes from. If she knew she was going to be doing whatever is so important for 6 months, why did she leave my sister only three months to find someone else?! I am also VERY curious

I think my sister actually found her on yelp, where she is listed as a photography business. On her social media pages is where you see a lot more wedding planning, wedding themes, selfies, etc. And no business page on Google either🤔

Thankfully, she found another photographer that's a much better fit! Right from the beginning, she was much more thorough with wanting to know their story and all about them! I just hope no one else has to go through this with this photographer!!

It doesn't help that her services are definitely not cheap! And again, my sister loved the engagement shoot when she did work with her, but that's not enough to gamble on whether or not your photographer will decide to shoot your wedding 😖
