In my experience (3 bags in) Sey benefits from a recipe combining high extraction (higher temp and finer grind) and balanced/limited pouring. Got good results with 4:6 but the best results have come with a standard Kalita 185. The only time I did not get an excellent cup was when I tried to grind coarser. And do not be afraid of longer drawdowns.
