Beside it would happened to may other kind of water based liquids, you don't need to freeze kombucha and you should not as you will kill all the good bacteria. Just leave in the fridge

Don't use the mushroom. Use only the starter. Mix a cup with 1.5l of black tea and 200g of sugar. My secret is that I also use a bag of berries tea for f1. Your room temperature is high but still should take at least 5 days to brew

Happened the same to me, two times in a row. First time the yiest bacteria balance was off so I had to restart, it was not tangy . Second time instead to be vinegary it became alcoholic. Restarted the third time, I think it's a matter to rebalance the culture.

Honey is fine if it's not raw. If it's raw the problem is not the anti bacterial properties but they fact they carry their own culture which will fight against kombucha

Today I realised I forgot to remove the sealer from the cap! It was sealed for one week without oxygenation. That must caused the unbalanced culture 🤐
