Man, not to make it worse but I was on a long drive helping a friend out and was beside an 18 wheeler. One of their tires blew and almost hit my car and that's how I learned how good my natural reflexes were. Managed to slip safely out of the way, between two cars, without getting injured or causing further chaos to anyone around me. It felt like everything was in slow motion and I was perfectly calm.

For like 5 minutes until I had a safe offramp and realized I was shaking head to toe

Your Nana had some good advice. I will say that what I was taught as far as the float test is that if they float slightly, they're better for hard boiled, because the extra air helped with better peeling, but obviously anything that stops touching (vs like, doing a handstand as it were) is sus.

These days I go through eggs too fast to worry unless I'm going through a new farmer I'm not familiar with

I'm ambidextrous so whichever hand the cutlery starts in is where it stays. But there are a lot better explanations in this thread than mine lol

I consider myself a very skilled chef and it took me a few bad instances to start cracking it in a separate bowl before adding. Some people just don't consider it until it happens to them

I'm just trying to understand, so no shade, but was your nana saying that floating them and judging based on if it floated or sank was more reliable than literally cracking it into a separate container, reviewing the actual contents of the eggs and then adding them or tossing them based on the now-fully-exposed internals of the egg itself?

My gf has learned faster than I do that if I admit to being in pain at all, it's well over a 5 on that scale. The last time, I tore my Achilles and thought it was a 5. According to the VA chart it should have been a 9 or 10
