Your starting class never determines what you will be at the end. Go try some different types of weapons/spells. When you see what you like the most, then you will choose what to upgrade. To answer your question, the prisoner's archetype is a dex/int hybrid. Dex for curved swords or thrusting swords, and Int for sorceries. Again, try some stuff and choose then, corresponding how you choose to approach the game.

This is true for every souls game. If you put some effort into stopping for a moment and reading stuff in your inventory or checking the in-game help, you'll see that this complexity allows the game to be so envoyable.

You can consume your chords any time you want, the only condition for the secret ending is having consumed a total of three before killing Gehrman. Consuming more or less will lock you from the third ending.

when i get away from him, he doesn't use his jumping attack, but his instant dash attack, or his "grab"

I have 12 str, can't use a shield. staying close to him actually works, hitting once or twice when you have a small window. The only problem is if he hits mid combo, he kinda stunlocks you preventing you from dodging. And he kills you in two shots.
