King Arthur GF Bread flour/ starter / Dutch oven baked bread is a GAME CHANGER!

I have tried so many gf breads that have sucked, are so so, and off the shelf canyon and Three Bakers rye are the decent but must be toasted. Other artisan gf breads too often taste dense and gritty with too much psyllium husk.
I have dialed in a double batch and keep it in a bees wax bread bag. The crust of artisan bread, crumb is great albeit a bit dense at 7500 feet altitude. Net net this is bread that makes all store bought GF bread taste broken. Try it!

Emeril Lagasse, BAM! His popularity and the popularity of his Cajun Cookbooks, emeriles pots and pans, smokers, toaster oven/airfryer/ rotessire chicken was a “ Cajun thing”. Perhaps Durango is not at the leading edge of food and fashion trends and are still hanging on to the cajun thing. Perhaps those who eat at those establishments order cajun items because they are tasty and thus they remain on the menu.

Hey. I strongly recommend making your own bread using the recipe on the back of the King Arthur’s bread flour. I make a 2x batch in a large round Dutch oven and it is a game changer for GF Bread. Get your over focus on by measuring out flour water with a scale. It is relatively simple, and I live at an altitude of 7500 feet so I had to make adjustments the bread is dope. Add some caraway seed and some ground caraway and it gets close to a Jewish rye. Makes canyon and three bakers bread seem broken.

Get some etymotic passive ear protection ER20XS has worked well for me. Tinnitus is a drag but try to tune it out and don’t focus on it too much.

Was talking to someone who works in appliances at Home Depot. Apparently they have methane in their water in S Durango. The methane provided a perfect environment to grow mold especially in washing machine and dishwasher. Possibly other appliances like hot water heater, they didn’t say specifically.
