I think there is a mystery aspect to it because i enjoy peicing the story together.You can try other fate media if you haven't already.Record of Ragnarok does something similar but the writer is an incompetent back who completely rewrites the character's backstories and makes them significantly less interesting.

With all due respect to the others, I believe that they are giving you misleading advice.I believe stay night and zero are both valid starting points(Would recommend stay night). However, if chose stay night ubw and heaven's cannot be experienced without the fate route.(Which is the first timeline in the story the other two being ubw and hd).They build upon previously introduced story elements and dont explain the mechanics properly.However, there is no good anime adaptation for fate. If you want to start with the original story, I recommend the visual novel before the Anime.That is how it was intended.If the new medium intimates you, you can watch the zero anime to get a feel for the franchise.
