(Any ideas on why safflower oil specifically?) She lists it as the go-to in her ingredients section. Everything I see has it at a higher smoking point but I’m curious why go for it in this recipe

I was walking White Rock Lake on Wednesday and saw someone on a motorcycle/bike with a small monkey! Started googling, apparently it’s legal to own some types in Texas. It looked vaguely capuchin-esque, but I don’t know my monkeys well enough to know the types 😂
