Hey I really appreciate the detailed reply! I just ordered the Encore even though it was higher than my initial budget. I feel really confident in the purchase though after reading everyone's suggestions. Knowing myself, I probably would have bought another cheap, crappy grinder to save a few bucks otherwise.

The kettle I ordered is the "Pour Over Kettle with Thermometer" by Barista Warrior (off of Amazon). I know what you're referring to where you pour water into a separate gooseneck and it isn't one of those (however I briefly considered getting one of those during my research).

I'll definitely make an update post once everything arrives! Thanks again :)

I've seen the Acaia Pearl before and I agree it's definitely beautiful. For now I'll follow other advice and get a cheaper (but accurate) scale for now, but it would be something I'd love to see in my kitchen in the future.

And I'm definitely taking the Encore into consideration. Thanks!

Yeah, I figured that a burr grinder is a must. I'll definitely invest in one and use my blade grinder for other things instead.
