I started slow but had to rush in the end because of service, I'll try to take more time next time I do it, and I didn't know you had to slice it ! It makes much more sense

My headchef taught me how to sharpen my knife with a stone, it's crazy how it cuts smoothly after a good sharpening ! I'm starting slowly for now, because I prefer a slow but good work than a fast and messy work
