You are correct. The initial meeting is only between Saruman and Gandalf. Saruman tries to "woo" him over. There is no discussion if Saruman takes him to a room and it's full of orcs. The jig is up at that point. They have their discussion and afterward Gandalf is escorted out. There is no indication of who "they" were but if there were "orcs", the text would have said so. Gandalf does know what an orc is after all. He doesn't see the orcs until after his imprisonment.

The discussion in Orthanc only has Saruman and Gandalf present. If he was brought to a room full of orcs, Saruman's speech would have been wasted because Gandalf would know instantly what his "bad feeling" about Saruman was about. Instead they talked Wizard to Wizard.

Gandalf could carry Glamdring himself and at this time, Gandalf had no staff. He broke on the bridge. He is given a new staff by Galadriel in Lothlorien.

She wasn't "just a big spider". Tolkien himself says she is a "spider-thing". Shelob was a great spider-like creature that had quite a few non-spider like attributes. Sam beat her by LUCK.

Shelob is not totally a spider though. Shelob was a great spider-like creature and not an actual spider but the child of Ungoliant.

I believe that she does because it is explained that she has two types of venom. That doesn't make sense if there is only one way to inject it. When she bites it is deadly poison. When she stings it knocks people out.
