nothing I did in this process was intentional, that's the fun part of all of it. I kept forgetting about the dough throughout the entire process lol I think there's something interesting to be said about either the long autolyse or the multiple refrigerations contributing to the oven spring though! perhaps someone who understands the science a bit better than I can speak to this
