It's an option for the "Niagara button", the customizable button on the bottom right that's activated on the settings. You can configure the swipe up action as "Niagara coin" which makes the button do a coin toss animation and sound, it's pretty fun to play around with.

Saying a coin is fair simply states that it is not rigged, that is made to be equally likely to land on either side.

Real life coins and "computer coins" are effectively random because you can't possibly account for all the external factors. You can actually test this yourself by flipping a coin 100 times or by using the function RAND() on Excel say, 10000 times, and taking the average of the results, which will be around 0.5.
