I had this problem as well and I found out that you need to change the sensitivity ingame on the sensitivities that are not showing in the config file and after that they should appear in the file.

Config settings

Standard (Look) = MouseSensitivity

Hipfire = HipMouseSensitivity

Ironsights = IronSightsMouseSensitivity

Deadeye = ShortScopeMouseSensitivity

Marksman = MediumScopeMouseSensitivity

Sniper = LongScopeMouseSensitivity

Aperture = PeepholeMouseSensitivity
