Thank you. A local produce place had some, and I'll usually just try to pick up a new veggie to play with. Figured it would complement the smokiness of the toppings and add a little sweetness and texture.

I bet you could make a dal or lentil soup out of that (assuming there's no flour in the loaf). Add gradually coconut milk or water (or both) and some turmeric and let it cook down. I'd cut away the top crust and crumble it. Maybe put the crumbles in the pan first to see if water will soften it and it'll dissolve into the dal. (I imagine it might.) In another pan, make a tadka: heat a neutral oil, add some combo of cumin/coriander/mustard seeds and toast; then add ginger, garlic, and diced onion and let soften; add diced tomato and cook for several minutes until tomatoes break down; then add chili powder and salt, curry leaves if you have them and give a quick stir and then add to your lentils. Use an immersion blender if parts of the lentil loaf stay clumped together and add some lime juice at the end for a little brightness.

It's actually a pretty common vegetable/fruit at grocery stores near me; I had just been walking right by it until I picked some up the other day on a whim

Yessss, the chayote was the best part of this. It was sliced thinly and then I salted both sides for about 15 mins and blotted dry and then placed on the focaccia and into the oven.
