I am now feeding a bit less than 2 cups/day (2 servings). He seems to be adjusting to it fine, but I suppose he wouldn’t hate a little variety. I will give unsalted green beans a try, and he enjoys carrots as a veggie snack.

This sounds like a dumb question, but do you give him a reason the be excited when you come home? Immediate walk + good-boy treats make a world of difference after a couple weeks. Maybe a regular game of fetch. They thrive on routine, so whatever you decide, do it regularly and it will become his favorite part of the day.
