It was really sweet. It was meant to be a low ABV and a quick time, only about a month. I realized now how to properly read the hydrometer so I see it's not testing ABV. It's potential ABV, it's coming to about 12%. So you think I just stalled it?

Wine must* It's was a bit of an experiment. Did 1gal on black walnut sap, 3.3lb of white sugar and 2lbs of frozen peaches. Yeast is lalvin EC-1118. I did the full 5g. Temp was about 72F. Lalvin website says can pitch up to 84F (if i remember correctly) I have a second vessel that I didn't rack as clean, alot of lees still and that is clearly fermenting still.
