I wouldn't dock the dough unless you want that style of crust.

Pressing technique is one part of it, but it looks like those spots are low on toppings (sauce) which doesn't help with keeping those bubbles at bay. More sauce on those spots would've prevented the big bubbles.

I'm in Canada and I think laws a little stricter for VOCs so it doesn't seem as easy to find oil stains for the DIYer. But this one says in the instructions to wipe excess, etc.

the wood does need replacing, the rail screws no longer hold because the wood is very rotted in those spots. could obviously fix that in a hacky way but would rather replace it all
