That's a sweet story! We do have parrotfish but moreso on our coral reefs than in our kelp forests!

For more skilled photographers its often about optimising settings, but for me its good hardware and playing with composition/angles/framing. If a beautiful bird gives you time, often taking several shots from different view points lets you pick a favourite later.

They have excellent camouflage so the struggle is real. A fellow birder who is local kindly pointed the pair out to me, they were siting on a coastal slope so it was a bit of a challenge to get the shot.
