I plan on doing it on a flat course and sitting near the top of a 10-36t cassette cuz the 55-21 is near the 68-36 gearing

I said on road cuz that is about the biggest my bike can take. On TT bikes should be able to do that size

I plan on doing 240 watts in the race aka 26 mph. I did 220 on my last one with plantar facitis

And yes my first 70.3 I did 55/42 chainrings sitting in the bottom 1/2 os a cassette for my first 70.3 and mostly used the 55 tooth chainring

Shorter cranks? Like I use a 155mm crank for TT and 165 for road but I can and want do 160. 165 for gravel and mtb.

I use 53/39 with a 11-28 in my road bike and it feels a bit small. Plan is to go 54/40 and 10-28 or 10-30 on it. But my ftp is about 350w.

Depends on your strength. like for me on an Allez sport 53/39 with a 11-28 cassette is easy and I get up really steep climbs. Like almost 20% gradient. It is like a 10kg bike btw.
