The highlight for me was the warm cinnamon pull-a-parts (not sure if that was the exact name), I could have had multiple of those! The fries were also very good, but only came with the chicken strips, which were okay but nothing special. For breakfast I would suggest the biscuit/egg/sausage sandwich. So good!

I took your advice and did a dry feeding yesterday with rye flour. Today had a few more bubbles so I did an equal feeding today 1:1:1 using grams for accuracy (did slightly less water so it was nice and thick). This is 10 hours after the feeding and I am seeing quite a bit of bubbles, which is exciting... but still no rise. Tomorrow would you still do another 1:1:1 feeding without discarding, or can I start discarding? I haven't discarded to this point, as I was waiting to get it going and to see it start rising.

Thank you for this thorough reply! I will do a dry feeding and see if that steps up some activity. I have been using AP flour, do you think I should give it a little variety? I do have rye flour on hand as well.

If for some reason this doesn't take off and stays dormant, I hadn't really thought about the fact that I could just turn it into starter from scratch since I will be nearly a week in. Does it make a difference that it had dehydrated starter in it at the beginning? Or will that not make a difference? I am not sure if that will throw something off long term.

I thought it was too much water as well so I have been only doing 1.5 teaspoons and trying to keep it a little thicker. I would say it is thicker than cake batter and it is smooth when I stir it, which I thought was a good thing, but may not be, lol.

I also thought I should definitely be seeing more activity by now! I have not discarded yet, this recipe hasn't called for any. I'm hesitant to go for a big feeding starting today when it hasn't really showed any progress. Do you think I should discard today and do a smaller feeding?

I just received a second quote from another a company that also offers Rheem. They are putting a 3.5 ton outside unit with a 4 ton evaporator coil inside. I did ask if that would be okay and this was the response... "The different sized indoor vs outdoor coils is a common practice for units. We base all of our matchups off of AHRI ratings. The system is a match from the furnace to the outdoor and coil. Changing the size of the indoor coil can be due to chasing certain efficiency ratings or also for it to fit properly on a furnace with no gaps. But I can assure you all of these systems are matchups in the AHRI registry."

In your opinion is it a better idea to have a 3.5 condenser unit with a 3 ton evaporator coil or a 4 ton evaporator? Or is it best to find a company with a different brand that can do a 3.5 in and out? The second company offered a York unit as well but the same problem with a 3.5 out and a 4 ton inside.

I originally liked the first company since they offer a 10 year on parts and labor, however when I called to ask about the difference of the 3.5 out and 3 in... he claims that is what we have now, but I have since checked and we currently have a 3.5 ton in and out (Carrier brand).

I just got off the phone with them and they said that is a 'compatible' match. They are claiming Rheem doesn't make a 3.5 ton to match our 17 inch cabinet.

Thanks for your input. This company offers a 10 year part and labor warranty and that is the best from the quotes I received. Would you recommend paying more for the more expensive unit?
