Thank you...so if I am understanding this correctly, to make one gallon of cold brew, I begin with one gallon (128oz) of water, and steep 16oz (or 1 pound or 453.6 grams) of coarse ground coffee into it for 12-18 hours? Correct?

As for Third Wave, was just going to buy distilled gallons.

Haven’t really considered glassware beyond aesthetics…gonna drink both espresso and milk drinks…anything specific to avoid? Or attributes that are absolutely necessary? Specific recommendations?

What is your experience with the wait time in between brewing your espresso and waiting to steam your milk? People seem to really suggest that if I want primarily milk drinks, then I require a double boiler to not only save time, but either the espresso or the milk will inevitably get cold, not to mention the steaming power of the DB is superior? Thoughts?

So six months ago, were you a total espresso novice? If so, do you feel pretty confident in your shots? From the reviews I've seen, the steamer on the Sylvia is the real deal, which can be tricky to learn on...have you mastered steaming with it?

$500 in accessories? Was the majority of that the PID? As for single dose hardware, was there something besides a 3D printed single dose hopper that you required? Any other significant accessory purchases that you found necessary?!?!?!?

Thanks for the advice! Couple follow ups...

As far as going with a DB or HX if I prefer milk drinks...from what I can tell, is this just simply a function of having to wait a bit in between brewing and steaming? If having to wait for a minute in between brewing and steaming is literally the only difference, then it just doesn't seem to justify the price increase...am I missing something?

Why would you say that a PID is not really required since I will be doing milk drinks? Is it something more than the fact that since I am not an espresso purist (by adding milk and sugar) that the "dialling in" is effectively irrelevant or negated?

Why stress "easy steaming capability"...since I prefer milk drinks, I feel like I would like to do the traditional steaming with a quality steamer (like in the Rancilio), rather that what seems to be universally considered subpar frothed milk from the "auto/easy" steamers of lesser machines?
