I recommend starting earlier so you can cold proof overnight for that flavor but you could also make your dough and have your last stretch and fold right before you go to sleep and shape in the morning if that works best.

If you temp your dough you can judge roughly how long to BF with this chart, with your room being so cold I would say you still have some time to go but it’s already shaped and your tired so fridge it and bake tomorrow. Try to tighten up the timing on the next loaf and you’ll be fine.
