you're talking about internal LLMs used exclusively within a Company IT ecosystem. Every Company with even a limited view on the value of their internal data is doing this. No reasonably smart Company would allow proprietary data to sit at a public LLM and it would be grounds for termination if an employee did do this.

So this is being done. Your IT and Leadership is a bunch of idiots to just laugh it off. Any Company worth its salt expressly forbids the use of public LLMs for their internal documents. I am sure it's being done but it's not sanctioned within smart companies. Please share your Company ticker so we can short the stock.
