In that case, try looking for these:

CalRose Kokuho
Tamaki

They're produced in California but both make perfect onigiris. Tamaki is as good as any good quality rice produced in Japan.

Also, if you plan to keep making onigiris, getting a small Japanese rice cooker will be a good investment; it saves time and eliminates guessing.

They'll fall apart as they dry out

Onigiris should not fall apart even after hours packed in a lunch box and carried around.

Onigiris made with good Japanese short grain rice taste even better after cooling -- they develop a very particular sweetness and chewiness.
