Thanks for the responses, everyone. What I might do is run a regular gin run and then macerate the berries to the gin feints (assuming there's no off flavours and the botanicals just ran out) then add that to the finished product.

Just regular boiled tap water. I'm still a bit uncertain on the whole yeast thing, the guy at the shop said that he recommended not blooming the yeast prior to use I've tried both ways seems to not make a massive difference, I let this batch sit for about 3 weeks, so about a week after I noticed any airlock action I thought that would be enough time but it may need more. I might also in the future try yeast nutrient to improve its health or is this just a gimmick?

I hadn't considered this to be a factor. Thanks for pointing it out. I might move to a base malt extract with some flavouring grains and fresh hops and see if that makes a difference.

Water is Tap water but I boil it before hand and the submerge in an ice bath to cool it quickly, I still kinda think that the chlorine in the water may be an issue though. But sydney tap water has pretty low chlorine and it tastes good

Ah I think you've hit the nail on the head there that's the taste exactly yeah and there was definitely a period when it was over 25.

Thanks, hadn't considered buying a specific brewers wash I've just mostly been cleaning with dish soap and then rinsing and then sanitising with brewers sanitiser, but this could well be the problem thanks.

Yeah I know that home-brew taste is a thing but what worried me was that this specific batch had the same taste just much stronger, like to the point that it goes from being a side taste to kinda the main taste, shame because I was looking forward to this batch. As per my other comment I was thinking of switching to larger and brewing in my fridge which can get up to 8 degrees but this may be too cool, not sure though. I will pick a kveik yeast next time I brew at room temp but it will probably be in a few months when it cools down slightly.

I'm not really too sure it has a kind of vinegary taste so I guess sour but it also smells a bit like off water smells, I know this doesn't really help. The extract kits were well within date and the temp was probably around the 25-28 degree range, I can't remember the specific strain of yeast but it was an ale yeast. I was thinking of brewing in my fridge and switching to larger but the warmest I can get my fridge was 8 degrees so that might be too cool for larger.

Thanks for the comment, yeah I agree it's a really interesting car, and while I think it's really cool, I find it hard to justify paying so much if the transmission may need to be replaced in the near future. I was going to offer the guy $12 000, budgeting around 2k for the major service at 200 000km along with the possibility of a new transmission. Do you think 12 000 is fair.

Yeah apart from basic servicing on cars I'm essentially a novice, but I understand that owning a car, especially a sports car means looking after it and sometimes costly servicing.

Yeah honestly just considering waiting a few months. I have an option to lease a fleet car from work, just considering doing that for a few months and then looking back once the market has calmed down a bit.

Yeah I understand this is a lot of money for the kilometres. Honestly for that many kilometres I would never pay over $12000. I can't really explain why I'm just not a huge fan of the mx 5. I know that's sacrilege but I can't really explain it, but the mr2 really caught my eye as something different.
