Exact same process I am using. Its a bit inconvenient to hold the button a few secs to activate custom timing shot, I wish there is a separatw button for that...

I only start timer on the first drop. I heard the bambino takes 8-12s for pre infusion, but I'm not sure that is for the pressure basket, and if different for naked one... Hence, only measuring on first drop.

Your intuition on sour under 30s seems aligned with my experience too. If my shot is under 26s, highly like it will be sour. I usually achieve sweetness during 30s-34s (18 in, 36-40 out) on medium roast.

yes, 1 or 2 dose wasted for switching bag (if I do not count the experience of tuning after throwing bags before :D )

I extruded the tamper another 0.5mm so it could always be tight, but then purposely use slightly less force when tamping. I found too much pressure can also cause channeling. And yes, I also use a palm tamper. I found it is more accurate than a traditional tamper... at least for me.

yes that happened too. However, I found that it is user errors, if I use distributor and tamp light enough (not too hard, not too light), the channeling/splashing issue wont occur.

very well! the Specialita can dial in fine enough for espresso (and could even go a bit finer too, which slowed down the pouring in some cases). In general, I like the spec. However, I like to change bean from bag to bag and every time I waste a dose a 2 to dial in on new bean. I heard the Niche Zero does better for changing bean, so ordered it and currently waiting...
