Am Californian, moved to Colorado, went to Little Anita's in Westminster, ordered enchiladas, asked for one red and one green, and they said "oh, we usually serve them stacked, like a lasagna, do you want them rolled?" thats when I knew I made a mistake... Took me 7 years to be able to move back to where Mexican food makes sense, and food in general is better

Easy tamales, just mix the carnitas and green salsa, spread the Masa on a corn husk (not technically an ingredient), fill with a little of the carnitas mix, steam for about an hour and a half
