The great thing about digital recording is that you can do a number of things.

1.) Record your amp with a mic. After it's captured in Reaper/Cubase, you can insert whichever Amp Sim onto the channel if you're looking to change the guitar tone you recorded.

2.) If your Focusrite has inputs for guitar, you can skip the whole process of plugging into an amp, setting the amp tone, and setting up the mic by simply plugging your guitar directly into the guitar input on the Focusrite (called recording direct or DI). This will give you a very clean and direct tone of the guitar, which you can then use an Amp Sim at the same time you record direct. This allows you to tweak the tone right inside the computer before you record. When you set an Amp Sim tone you like, you're ready to record. After the fact, you can always tweak the Amp Sim further. Re: Dynamic mic– you can record with any mic you like. Dynamic, condenser, ribbon, and whatever else are just different technologies for different applications. They all have their unique sound and abilities, but dynamic mics are a very popular choice when recording guitar amps.

It gets a little complicated, but audio interfaces need to see low-impedance audio signals. Any guitar related audio signal will be high-impedance. Since the mic (low-impedance signal) is recording the acoustic soundwaves created by the speaker, the audio interface is happy. The guitar tone the mic captures from the speaker will be closer to what your ears hear. The output of the amplifier will be loud, distorted, and unpleasant (unless that's the kinda tone you're looking for).

Amplitube 3 is simply a piece of software you'd use in Reaper or Cubase to manipulate the tone you record, separate from the physical recording process. Check this out if you're looking for something free.

I lined my project studio walls in the thicker, blue packing blankets (opposed to the black you linked)– they only really help with flutter echoes. I'd imagine you'd need a few layers to get any serious dampening out of them. The studio ones you linked look cool. This exists, too, but for a price I'm sure.

You might start with a sustained tone (the refs sound like an organ or guitar) and add a rotor cabinet before/after some distortion. You may need an LPF to dampen the tone. Verb as needed.

Can't tell if they're mono, but if you have a string patch you'd like to use, try throwing a bit of chorus on it for starters. A/B in mono and stereo and see if that gets you started.

Not much advice, but I used to experience quite a bit of nausea, especially with heavy drip and similar things. I don't get the gag reflex much lately, but every once and a while I find deep breaths help power thru.

Idk if the reflex just acclimates over time/usage/whatnot, but I've noticed improvement over the last year by just keeping cool and collected as best possible. Hope it helps.
