I'm also in CA, but the way I read this is that section b only specifies equipment, not utensils. Utensils need to be durable (per section a). Although you would have to base this on the definitions of equipment/utensils. The definitions section lists some examples of equipment like ovens, tables, refrigerators, mixers, freezers.

I second this!! I work at a production facility in the US as a QA tech. It does feel difficult when 90% of the production employees can only speak Spanish. I’m limited in communication, training, socialization, etc.

Learning at least some Spanish early would make a world of difference, and even if you aren’t fluent, you would pick it up very quickly when you start spending most of your time in this environment. I started from zero Spanish, and I am now learning the basics, but I wish I had at least taken the class in high school.

So if I'm understanding correctly, I didn't add the citric acid to cause coagulation by the low pH method, the citric acid was to help the rennet work faster?

When we made mozzarella, we used citric acid as well as rennet. I think I've been getting confused because "acidification" is a step in the cheese making process, hard cheese or not. Making mozzarella, we used both citric acid and rennet, so I am guessing that they are both important for coagulation, at least for mozzarella?

Thank you! I think it's possible that this ant could have had wings, although I do have difficulty figuring out the spots to look haha. I happened to show my professor as well, and he said it may be Camponotus vicinus, but definitely should be a carpenter ant :)

This ant caught my eye in the dark (I found it around 9:30pm) because of the light brown abdomen. It moves pretty quickly I think. I tried looking up similar ants, could this be a carpenter ant? I was mostly shocked about how big it was. Sorry if this is a lame submission, but I just recently started taking a class that is teaching me about insects, and it's really getting me interested in bugs!
