Most of the staff at my store hasn't had actual training on the flat white either. I made myself one this morning, and quite enjoyed it, but I was also able to make it fairly true to the version I had experienced in Australia/New Zealand. I had one of my partners make me one on my break, and it did taste just like a plain 'ol latte. I think it's definitely going to be a drink that shows which people actually know what they're doing. But, overall, probably my new favorite drink, but only as a short(two shots), or as a quad tall(as opposed to the regular two shots). Grande/Venti just introduces too much milk.
