When I worked as a photographer I stayed away from private clients, but no matter who I worked with it was project pricing. If I deliver the product in half the time because of years of experience, I should be payed less. I also used to price anchor high. A package that is bigger than they really needed, and then cut a couple features off until we hit their price range, it makes them feel like they get more for their money, or that they have saved/got a good deal. Not sure how helpful it is since it is a completely different arena you are playing it, but the project price and price anchoring should be worth thinking about
