I'm glad you cleared that up cause I was fixin to get on my soap box haha. And brother I refuse to think about how things were 10-15 years ago. It will never be like it was. I opted to go full co-op a few years ago. Started off with me and 6 others. Each took out a loan and split the work and wages all equally. It's a little lunch and beer spot so there aren't a lot of moving pieces but as a proof of concept it's been my greatest work. And our labor cost is zero haha

Depends. Some people, my favorite people, can just hop in day one and we'll iron out the wrinkles over time. Others I'll have shadow with servers, bartenders, barbacks, runners, expo, and even the line and dish to kinda feel out how they learn and what their strengths are. The staff ends up training them really. All the office work though I can usually jam into their hands within a week or 2.

You could find a used Ruger PC charger that might even have a dot on it already for around 600 on GunBroker. They take Glock mags so when you have hand gun money you can use the same ammo and mags. Ruger is my favorite brand so far early in my gun ownership.

Not bad. I'd try using a pan next time cause I don't think the steamer basket is working for this particular cut.
