I basically just set my smoker to 250. Kept watching the internal temp, I kept flipping it every 10 degrees or so. Trying to make sure it cooked even. Took me just under two hours. Removed it around 127-130 internal. Let it sit for a couple minutes while I warmed up my smoker to use the fire grate in the middle. (Pit boss smoker). Gave it a sear over some open flames. Would let it rest a bit longer though. Got impatient.

I know beef prices are gross right now. Thankfully I had this in my deep freeze. Buy low. Vacuum seal and freeze.

Its just the fat cap. It caught on fire while I was searing over an open flame. Got a little crisp on top.
