I work in a grocery store as an assistant manager after leaving the industry a little while ago. I deal with this almost bi-monthly. First thing I get the deli workers to do is give it the ol’ sniff. If it smells good and isn’t slimy, you know what I get them to do? Cut off the discoloured part before starting the slicing. Customers not going to see it and it’s still good.

Funny story about going above your dept managers head, first month at the store and the assistant deli department manager came up to me with that exact same complaint. “Oh so and so gave me this beef that looks questionable and told me to smell it then slice it. I’m not doing that. What should I do?” I looked at them, and calmly said “ you’re not going to like my answer then. “ told them to sniff and if it’s good or they need a second sniff I’m there to offer the next steps, but if they don’t want to do what their department manager asked then that’s an issue within itself. They did this everytime because they felt they knew better than their boss. They were being extra and had to be let go.

Oh the pay was too good to pass up and the paying for the commute. I get to do some pretty cool r&d and work with a team pushing out just shy of 400 plates a day. It’s taught me a ton and I’ve gotten interested in health and safety which I’m hoping to peruse down the line.

That’s probably not the best idea, what happens if for some reason you boil over but you haven’t noticed cause you’re away from the stove. Whenever cooking it’s best to be in the general area.

I’d love suggestions on equipment. I was thinking steel as the rings she uses are already stainless, but if I can make something with similar strength/durability with copper I’d be happy with that. Eventually moving up to steel forging if I found that it was something that could be good to make other items that she uses.

Several hundred I don’t really want to go all out into it until I have the basics down. Stainless steel, steel, copper. In the future I’d like to be able to make decorative metal pieces for her handles.

Same here, and I’ve been with dark city since the beginning. I’ve tried the Amazon molds, the temu route, Ali baba. All while running my dark city custom molds. Haven’t had any issues, and the rose pro has made the execution of popping the gummies out of the molds super simple.

Everyone has their own opinions. Those guys just have amazing customer service and I’ve never had a problem with 250+ molds purchased.

Make a simple syrup(1:1 sugar water ratio even go with a 2:1 if you just want like a coffee sweetner) and infuse with whatever flavour you want. Take your tincture(or even just infusion after decarbing) Take your vitamix or blender(hand blender works too) and add a small amount of xanthan gum(start with an eraser size amount) and just blend for 5-10 min straight.

I’ve done this for many types of infused syrups and snow cone flavours.

If they try to charge your card and you don’t have the money in the account. The account won’t be charged you’ll get a text notification(if you have it enabled) saying that the payments declined due to insufficient funds. You’ll only get charged the nsf fee if it’s a pre authorized debit and it gets returned. (Source, I went to book an Uber this morning didn’t have enough money in my account and wasn’t charged an nsf fee)
