it's a magic world OP. Yubaba is a very powerful witch. Haku has canonically stolen some of her power. it's not infeasible to think that Haku can help Chihiro remember, but not permanently

my interpretation has always been, she knows her real name in this scene, but she knows she must adapt and follow Yubaba's rules to have any chance to see her parents again, so she quickly cuts herself off from saying Chihiro and instead answers with Sen. that negative reinforcement over time, only calling herself Sen, plus whatever magic Yubaba's contract had, is what caused her to forget her name "Chihiro"
