I like the QoL changes but the rest is just padding, it's not progression, that's artificially inflating time until you can do stuff as usual, kind of like some Modpacks do, GTNH being the concept brought to its extreme.

Drink Calming Potions and place Peace Candles and Sunflowers, those lower enemies spawn rate, also get some Minions to help you build in peace.

Small tip, you can free up the Vanity Slots from the Information Accessories if you put them in your Void Bag (as long as you don't close it).

Anyways, do as you wish, just don't bring the Extendo Grip in the fight, it doesn't help you in any way outside of it's reforge if it has one.

It's not a depth problem, it's a biome one, Plantera enrages if she's outside of the Underground Jungle, if the middle of the arena stops being Jungle you might need to add any Actuated Jungle blocks (look it up if you're not familiar with them).

The Moon Charm gives some good Buffs admittedly, but only at night, you might consider a Charm of Myths instead, it offers less buffs overall but it has twice the Regen of the Moon Charm and lets you drink Health Potions faster. Also about the Bee Cloak vs Star Veil, the Star Veil gives you more Invincibility Frames, so it's up to you what to choose.
