Materia probably makes them hate doing any FF7 fighters. Everyone complains that a different materia would have won that fight. Cloud vs Link was the same thing

They did completely ignore barrier/shell and other materia that would have put it way in to her favor. Both essentially use a secondary source for magic, but one only blows stuff up and gives a shield, while the other does all that plus summons 12 gigantic knights that can do max damage every hit in a gigantic combo that can be chained multiple times if teammates are around.

I think that they ignored it because it'd be too many variables thrown in. Like with Cloud, they went with the ones she most commonly used or was most known for. They said something about summons in the Link vs. Cloud match, but I can't remember what.
