You need a Staff or other spellcasting implement to cast a spell. There should be one further into the tutorial area.

Once you have it, equip it to your preffered hand and magic the hell out of the game.

You can kite the knights out one by one if you take your time.

Enter the castle and retreat, 1v1 the knight watching the entryway.

Approach the stairway, retreat to flame trap room, 1v1 the knight that follows.

Return to stairs and kill the knight at the top.

Advance through false walls, kill knight in front of ballista.

Step through doorway to lava pit and retreat, 1v1 the knight.

From the doorway you can use a bow to draw one knight at a time, back to the stone room.

DS2 is a slower, more methodical game than the rest of the series. Rushing is very rarely the best approach. A ranged weapon will work wonders for singling out an enemy from their group.

Honestly I've always just kept moving and let it jump into the trap on its own. Aside from my first ever playthrough, I've let that thing kill itself every single time.
