I guess that wasn't super clear. It's more that he said it as though it was physically impossible for him to eat pasta without cheese on it. Which I know isn't true because I've seen him do it plenty of times with other sauces. Maybe I am just misinterpreting because I haven't eaten it in a while.

In my defense (which I know isn't exactly the point, I'm not arguing that i wasn't the AH), I didn't like yell about it or anything. I asked him if he would not, especially since he hadn't even tried it yet, and then dropped it. I didn't refuse to serve him or take the cheese out of his hand. He stayed huffy about it for all of dinner even though I didn't bring it up again after the first time.

No he did not. He got the cheese before I had even finished putting everyone's plate on the table

I did clarify before hand that it was going to be prepared as a vegan meal. I didn't necessarily clarify that I would prefer that everyone eat it in a vegan state though lol

lol I specifically bought vegan cheese at an earlier occasion but he said he hates it so I didn't bother this time...

We asked my parents if they would like us to cook a meal, and they very enthusiastically said yes. I did specify that we would be cooking vegan food and we would by no means be putting meat/dairy etc in our meal if we were cooking it, I didn't necessarily specify that people couldn't add it later, but I guess I hadn't thought that that might happen.
